Broth is really important when it comes to ramen, so Unabara has created a combination of French style lobster bisque and Japanese ramen soup base, both of which are brimming with flavours and delighfully rich. The lobsters are imported from Boston, and are known for their large red claws and mild sweet meat. Sapporo miso is imported all the way from Japan’s northern most province of Hokkaido; the birthplace of miso ramen.
Chashu, a Japanese style braised pork belly rolled into a log and braised at a low temperature, is also served with the lobster ramen dish; ramen and chashu complement each other's flavours extremely well. The overall effect is outstanding; the ramen fits perfectly with the juicy, tender lobster meat, braised chashu, crunchy cabbage and an egg poached at precisely 63°C.
